Veggie Burger

If you want to try a healthy, plant-based burger option, here's a vegetarian burger that will be the star of your summer cookout. Packed with flavor and lean protein, these black bean burgers are satisfying and delicious.

Ingredients

  • 1 Tbsp olive oil
  • 2 garlic cloves, minced
  • 1 can (15.25 oz) black beans, rinsed and drained
  • 1 cup panko bread crumbs
  • 1 tsp grated lime zest
  • 3/4 tsp chili powder
  • 1/2 tsp chopped fresh cilantro
  • 1/4 tsp salt
  • 2 large eggs, lightly beaten
  • 6 whole wheat burger buns
  • 1/2 avocado, sliced (optional)
  • Lettuce and tomato (optional)
  • 1/2 red onion, sliced (optional)

Preparation

  1. In a food processor, combine the oil, garlic and beans; pulse 8 times or until beans make a thick paste. In a large bowl, combine bean mixture and bread crumbs. Stir in lime zest, chili powder, cilantro, salt and eggs. With moistened hands, divide bean mixture into 6 patties (about 1/3 cup each).
  2. Lightly coat a large nonstick skillet with nonstick cooking spray and heat to medium high. Add patties to pan; reduce heat to medium and cook for about 3 minutes, or until bottom edges are browned. Turn patties over; cook for 3 minutes, or until bottom edges are brown.
  3. Arrange the patties on the buns and top with the avocado, lettuce, tomato and red onion, if desired.
