Chicken Pita Sandwich

If you can't go out to lunch, take lunch outdoors! Pack a picnic lunch with these delicious chicken pita sandwiches.

Ingredients

  • 2 Tbsp balsamic vinegar
  • 1 1/2 Tbsp olive oil
  • 2 Tbsp chopped drained sun-dried tomatoes
  • 1/4 tsp black pepper
  • 1/4 tsp dried tarragon
  • 2 garlic cloves, finely minced
  • 4 cups shredded cooked chicken breast (about 3/4 lb)
  • 1 medium tomato, chopped
  • 1/2 cup (2 oz) grated part-skim mozzarella cheese
  • 2 scallions, chopped
  • 1 Tbsp capers, rinsed and drained
  • 1/4 cup thinly sliced fresh basil
  • 6 pitas (6-inch diameter), cut in half
  • 3 cups baby mixed greens

Preparation

  1. In a large bowl, combine balsamic vinegar, oil, sun-dried tomatoes, black pepper, tarragon and garlic. Stir in chicken, tomato, cheese, scallions, capers and basil.
  2. Line each pita half with 1/4 cup greens. Divide chicken mixture evenly among pita halves.
