Chocolate Protein Ice Cream

Craving a cool, chocolatey dessert that won’t ruin your healthy diet? Our Chocolate Protein Ice Cream recipe delivers! This velvety, protein-rich frozen delight combines the indulgence of ice cream with the nutritional benefits of a protein shake.

Ingredients

  • 1 can (14 oz) light coconut milk
  • 1/4 cup nonfat plain Greek yogurt
  • 1/4 cup (about 25 grams) plant-based chocolate protein powder
  • 1/4 cup Medjool dates, pitted and roughly chopped
  • 1 Tbsp cocoa powder
  • 1 tsp vanilla extract, optional
  • 1/4 cup dark chocolate chips, for serving (optional)

Preparation

  1. Place a large, deep loaf pan in the freezer.
  2. In a blender or food processor, add the coconut milk and blend on high until smooth and creamy, about 1 minute. Add the remaining ingredients, except the chocolate chips, and blend on high for 1 minute, until thick and creamy.
  3. Transfer mixture to the chilled loaf pan. To avoid the ice cream from getting too icy, lightly mix it every 20 minutes for the first hour. Cover and freeze for at least 8 hours or overnight.
  4. Thaw for 10 to 15 minutes before serving. If desired, serve with a sprinkle of chocolate chips.
