Kale, White Bean and Tomato Salad

Here's a healthy, nutritious salad that will keep you satisfied for hours. Protein-packed cannellini beans and high-fiber kale make a delicious salad combination that is filling enough for lunch or dinner.

Ingredients

  • 3 heirloom tomatoes (about 1 lb), chopped
  • 1 (15 oz) can cannellini beans, rinsed and drained
  • 6 cups baby kale (5 oz)
  • 1/2 small red onion, diced
  • 1 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp red wine vinegar
  • 1/4 tsp salt
  • Black pepper to taste
  • 1/2 cup fresh basil leaves, torn

Preparation

  1. In a large bowl, add the tomatoes, beans, kale and onion and toss.
  2. In a small bowl, whisk together the oil, lemon juice, red wine vinegar, salt and black pepper. Drizzle over the salad. Add the basil and toss until combined.
